Summertime is the perfect time to break out this delicious Pineapple Mango Salsa recipe because produce is at its finest this time of year. We made this recipe to serve with tortilla chips during our Captain's Hour this past weekend, which is a time before dinner with our lake neighbors to enjoy an appetizer and a cold drink. Everyone raves over this refreshing pineapple mango salsa mix that pairs perfectly with a salty tortilla chip. You can't go wrong with finely diced fresh fruit in the summertime.

You can make this salsa appetizer a real showpiece by hollowing out one-half of the pineapple and spooning the salsa right into the pineapple boat to serve. We place the pineapple boat onto a pretty tray, like this turquoise rectangle tray, so that when salsa inadvertently spills over the edge, you can still salvage it by scooping it right off the try onto a chip.

This pineapple mango salsa also works well as a topping for a freshly grilled piece of fish or chicken. One of our favorite ways to serve it is atop a piece of tortilla-crusted tilapia that we buy at Costco. It is so yummy! If you love fish tacos, this salsa reminds us of the kind that is often served atop fish tacos.
