Growing up, Kim's mother, Dorothy, always made these frozen fruit salad cups. These are super easy and delicious! They are the perfect combination of ingredients to provide an instant tropical delight for your taste buds. This would be a great snack for kids or a semi-healthy dessert to curb the need for sweets. We find them fun to break out mid-afternoon for a quick cool snack on the dock at the lake or to serve poolside at Dorothy's pool. Anytime we make these, we double the batch and they still disappear quickly . . . which validates them as a big hit with our family and friends!
1/4 c. nuts (if kids will be enjoying these, we skip the nuts)
1/4 c. maraschino cherries, cut into fourths
Small can crushed pineapple, drained
Small container sour cream
Large banana or 2 small, cut into slices
1 T. lemon juice
1 c. colored marshmallows
Directions
Mix together all ingredients.
Freeze in cupcake liners in a muffin tin.
Set out of freezer for 10-15 minutes before serving.
