1 package Portobello Mushroom Ravioli (from Costco is our preference) or any ravioli of your choice
4 c. heavy whipping cream
1 c. grated Parmesean
1 c. fresh baby spinach
1/2 c. sundried tomatoes, ripened, julienne cut
1 1/4 tablespoon butter
Salt & pepper to taste
Directions
To make the cream sauce, brown the Italian sausage in a large skillet and set it aside.
In the skillet you browned sausage in, add truffle oil and saute garlic until slightly browned.
Add heavy cream to the skillet and bring to a boil.
Stir in grated Parmesan cheese, butter, salt, and pepper. Continue to stir until all cheese is melted, about 5 minutes.
Add spinach & sundried tomatoes and stir until heated (another 2 minutes).
Remove from heat and set aside.
Cook Ravioli according to package instructions.
To serve, place ravioli on a plate and spoon sauce over them. Garnish with additional shaved Parmesan.

You have to taste it to believe it. This recipe tastes and looks like a master chef crafted it, but really, you can do it with just 10 ingredients! I think I was meant to be Italian. When you have to make a concerted effort to space out the # of days in the weekly menu before you can have another pasta meal, you might need an intervention. Anyone else have this problem?
