This easy, cheesy, hearty Italian sausage and tortellini soup recipe is perfect for feeding a crowd. It's pressure cooker and slow cooker friendly, too!

Ingredients

  • 1 lb Italian Sausage

  • 1 package frozen cheese three-cheese tortellini

  • 2 cans Italian-style diced tomatoes

  • 1 tub plain cream cheese

  • 32 oz chicken broth

  • 3 cloves of garlic, minced

  • 1 cup Mozzarella cheese

  • A handful of sliced mushrooms

  • A handful of spinach

Directions

  1. In instapot, put olive oil, garlic cloves, and Italian sausage and turn on Sauté setting and brown.

  2. Add tortellini, mushrooms, and spinach.

  3. Pour tomatoes and broth over the top then add cream cheese and stir the entire pot up.

  4. Turn instapot to manual for 5 minutes.

  5. Once it beeps that it’s finished, release pressure and then open and add cheese.

  6. For crockpot, cook the Italian sausage, olive oil, and garlic in a skillet. Once completed, add all ingrediants to crockpot (except cheese) and let simmer for 2-4 hours. Add cheese and serve.
